In our house we are hugely into Mexican Food, I have eaten it since a child, my Mom is American and it was a staple in her house, so in turn it is in mine too. Luckily Ashley loves it.
The other day when stocking up on Tortilla’s and Shells I saw a new Meal Kit from Old El Paso, Tortilla Bake, I do like to make some of my Mexican from fresh but to be honest you can not do any better than some of Old El Paso’s Seasonings and Sauces.
The best way to describe the Tortilla Bake for me is a Taco Lasagne, the kit comes with all the sauces, shells and instructions needed all you need to add is
500g of Mince
The kit has clear simple instructions, very much like a lasagne you cook the meat and then layer with tortilla’s (instead of pasta) then in the oven to create a nice baked top, all in all the meal took about 5 mins of prep time and only took 25 minutes to cook from start to finish.
I followed the instructions near enough to the mark, the only thing I changed was adding a little more water to the sauce than the said 50ml (added more around 70/80ml) this is cause I like a runnier sauce, more cheese than said 75g, I felt this was a little tight for the crispy top and I added some sour cream to the top as I like a creamier texture to my food.
We added rice to accompany our bake, just a personal preference for us, we always do with our Mexican, the meal would easily feed 4 normal appetites, we both enjoyed this a great deal, it has the taste of Taco’s but with less of a spicy edge, Addy tried a bit and liked it too. I must say I enjoyed this more than the hubby but that’s cause he likes a little more of a kick than me.
All in all this Kit will become a cupboard staple for us, it’s a great meal for a busy work night when you don’t want to have to worry about taking too long to prepare, I managed to even do some household chores whilst it cooked, with little tweaks you can certainly make it more to your personal preference much like I did.
