Date Night In With Coca Cola

Date nights out have become a thing of the past since we had children, even more so when you have 3, but that does not mean you should end Date Nights full stop.

Ashley and I can easily get caught in the evenings watching TV, tweeting, blogging and speak little to one another, this is no good for us as a couple, so we have made a promise to ourselves for a Date Night In once a month.

This weekend was said night, I wanted to do something different, we get stuck in the same old meals, same old treats, so when Collective Bias asked if I wanted to bring Coca Cola into my evening I thought I could make this work.

My little shopping assistant and I headed to Waitrose to buy what I needed for the meal I had planned, she assisted me in putting the Coca Cola into the trolley as well as a cute little Piggy toy.

After scouring the internet I was amazed to find a huge amount of tasty looking meals which use Coca Cola in there recipes, I settled on the following menu.

Main Course – Slow Cooker Coca Cola Ribs & Homemade Chips

Dessert – JD & Coke Cupcakes and Coca Cola Fudge Brownies

Drinks – JD & Coke / Cuba Libre Cocktails & Coca Cola

For the past 7 years I have been wanting to make Ashley JD and Coke Cupcakes, but always found an excuse, it being Coca Cola date night this was a great opportunity, I used a recipe from a cook book called Eat Me, with a couple of small changes.

Date Night With Coca Cola

Once dinner was ready (little later than planned, long story involving switched off slow cooker) I set the table, we switched off the TV and enjoyed a lovely meal, not much dissimilar than being in a restaurant, although no noise, cheaper and more satisfying for me that I made this for my husband. We chatted about the meal, about our days, about the kids and wedding renewal plans for November, 9 months and counting.

Coca Cola Ribs

The ribs were simply delicious, so tender and I could not believe how well the cola worked, the recipe suggested cooking with a Mexican Cola rice too, next time we shall be trying this, I learnt that the Mexicans often cook with Cola in their recipes, I can see why, it makes for a lovely taste and so simple.

Once we had finished our dinner, we headed to the living room and enjoyed our desserts with a nice film, had a snuggle on the sofa as we ate far too many cupcakes and brownies, both were delicious, so easy to make and definitely more moist due to the added Coca Cola in them.

The evening was perfect, it offered us actually more than a date night out, there was no worrying about what I would wear, or getting home in time to relieve the baby sitter, we sat comfortably, chatted, laughed, ate well and enjoyed each others company, I totally recommend Date Nights In and am excited for the next, thanks Coca Cola for inspiring our evening, I found so many awesome recipes that use Coca Cola that I started a Pinterest board to go back to for next time, check it out.
