It’s National Picnic Week ! We all know I love a picnic, for many reasons but clearly food is one of them.
Although a Sandwich at a picnic is not my favourite, I much prefer finding alternatives that keep better, easy to travel and that the whole family can enjoy.
Taco Salad fills all these requirements and even better it only takes less than 15 minutes to make – win!
Taco Salad is something my Mom has made us since we were little, she is American and was taught when she was younger. It comes about from using up leftovers from Taco’s the night before but you can also make it from fresh.
Either way it is delicious and keeps in the fridge for at least 3 days, just don’t add the hard shells/tortilla chips till you are ready to eat.
- 250 Grams Beef Mince
- 2/3rds of a Packet Taco Seasoning
- 1 Onion (Diced)
- 2 Tomato
- Half Iceberg Lettuce
- 100 Grams Cheese
- 125 ml Sour Cream
- 4/5 Handfuls Taco Shells or Tortilla Chips
- Few Leaves Coriander

The great thing about the recipe is you can pretty much remove anything you are not to keen on (minus the taco seasoning), you could happily try and make it veggie with tofu mince, could cook the onions in with the mince if you do not like such a strong taste. It is up to you.
