Soft Banana Cookies

I am not sure about you, but we always have leftover Bananas each week.

I only like Banana’s when they are freshly bought,  but the amount of times I forget they are on the side and then there is just brown Banana’s.

Thankfully I love Banana Loaf and Muffins so it is always a nice excuse to bake them, so when my friend Sunvill shared a Banana Cookie recipe with me I knew they had to give them a try.

She found the recipe on an American Blog called LoveFoodies via Pinterest, it really is so simple and as they turned out perfectly I thought I would share it here converted into British measurements as I know some people find the conversion from cups a little tricky.

A recipe for simple yet delicious Banana Cookies from Innocent Charms Chats

The original recipe makes 50 cookies, but I did not want to make that many as we would just eat them, so I have gone with a recipe that makes approximately 25/30 bite sized cookies.

Warning, these are not a standard hard cookie, they are more like a soft cake style cookie, which the kids have loved

Soft Banana Cookies
A soft, cake style Banana Cookie
  • 145g Plain Flour
  • 1 Tsp Baking Powder
  • 1/4 Tsp Bicarbonate of Soda
  • 1/4 Tsp Salt
  • 1/2 Tsp Cinnamon
  • 140g Caster Sugar
  • 76g Butter
  • 1/2 Tsp Vanilla
  • 1 Egg (Beaten)
  • 2 Bananas (Mashed)
In a bowl mix the Flour, Baking Powder, Bicarb, Salt and Cinnamon and set asideMix Sugar, Butter and Vanilla till turned to a creamAgg beaten Egg and Bananas and mix wellAdd dry ingredients a couple of spoons at a time till mixed wellPut in the fridge to chill for 30/40 minutesPreheat oven to 180C and line a baking trayPlace Teaspoon balls of cookie dough on the tray leaving a couple of inches between for spreadingDust with Sugar and Cinnamon for extra taste (can be left)Bake for 9/11 minutes until slightly goldenCool for 2/3 minutes on a rack, then enjoy

We are enjoying these a little too much, I am not sure they will make the end of the week. I would have added some Chocolate Chips as it is a favourite combo of mine but we had run out.

I am thinking these would be great peanut butter flavoured too, so watch this space as I am going to try changing the recipe up.
